So, let’s get started!

Ingredients:

  • 12 cups of water, which is almost 3 litres
  • One whole chicken (at least 8 pounds), cut into pieces
  • Coarse salt
  • ½ tablespoon freshly ground black pepper
  • ½ tablespoon dried oregano
  • Three thinly sliced onions that would make up to 4 cups
  • 2 cups chopped green cabbage
  • Two celery stalks
  • Three crushed garlic cloves
  • Six medium carrots, all of them sliced ½ inch thick
  • ¼ cup freshly chopped parsley for garnish

We are sure you have most of those in your freezer already. All you need to do is, take them out and get started with the directions.

Directions:

Step 1: Prepare The Chicken

Remove the chicken skin from its body and then add this to a large soup pot, which has an airtight lid. Finally, pour the water over the chicken and let it steam.

Step 2: Prepare The Veggies

On the other hand, you also need to prepare the veggies for your soup. Chop the onions, slice the carrots and celeries and shred some green cabbages. Add the vegetables to the soup pot. Cover it up and bring it to a boil. Eventually, reduce the heat and simmer this for a good 30 minutes.

Step 3: Remove The Chicken

Once done, bring out the chicken from the pot and let it cool. Take out the bones from the meat, discard the bones and cut the meat to bite-sized pieces. Once you have cut and sliced the chicken, add it back to the soup pot.

Step 4: Season The Broth Accordingly

Bring out the salt, oregano and black pepper to add it to the soup. Simmer it for another 15 minutes till the flavour evens out.

Step 5: Serve

You’re all done with your soul food. The last step before you can sip your soup is to garnish it with freshly minced parsley, and you’re good to go.
