Cheesy Potato Pancakes…
They are quick and easy to make with some of the most available ingredients in your kitchen. This simple recipe is totally worth a try when you are hungry and are looking to make something swift.
Seriously, these are good. Delicious and cheesy, it’s going to be a HUGE hit among your friends while you call them over for a movie. You can serve them plain or even with ranch dressing as a dip.
Without much ado, let’s get started on the recipe!
Ingredients:
- 4 cups of mashed potatoes
- 2 cups of shredded mozzarella cheese
- 1 egg
- ¼ cups of flour
- 2 – 3 tablespoons of chives, chopped
- A ½ cup of plain bread crumbs
- Light olive oil to sauté
- Sour cream when serving
*This recipe is ideal for mashed potatoes that are not too creamy or buttery. In any case, if your potatoes turn out to be creamy, you will need to add a little bit of more flour for it to hold its shape. Do take note that it’s not intended for instant mashed potatoes.
Time Saving Tip: Use an ice cream scooper (we’re sure you have one at home) to cream uniform shaped pancakes, which by the way, makes your task way more natural than having to create them from scratch.
Once you have prepared all the ingredients, it’s time to get down to business…
Step 1: Make Mashed Potatoes
Load water on a 5 QT pot. Add 1 tablespoon of salt, and about 7 medium peeled quartered red potatoes. Boil the potatoes until it can be easily pierced with a fork. Drain the water and mash the potatoes using 4 tablespoons of butter. Allow it to cool down to room temperature. You can even choose to make the mashed potatoes 1 – 3 days ahead of time, or use leftover mashed potatoes if you want.
Step 2: Make Potato Pancakes
- In a large bowl, mix together 4 cups of mashed potatoes, 1 egg, 2 cups of shredded mozzarella cheese, a ¼ cup of flour and 2 tablespoons of chopped chives. If you own a potato masher, use it to mix and mash the mixture well together until all of it mixes well. Make sure that the potatoes are not too loose to hold the pancake shape. If so, add 1 tablespoon of flour at a time to make it thick.
- Scoop up a right amount of the mixture into your palm and form it into a round shaped thick patty. Dredge its side with bread crumbs and place it on a cutting board. Repeat with the other pancakes.
- On a large non-stick pan, pour enough oil and heat it over medium heat. When the oil becomes hot, add the potato pancakes in a single layer and sauté for about 3 – 4 minutes. Once one side is done, flip over the other side and repeat. Be gentle when you are flipping as the results are going to be totally worth it! Don’t hesitate to add more oil if needed.
Step 3: Serve
- Serve with cheese and green onions on top and even with sour cream or ranch dressing as a dip.
